For example, during the summer, we source beautiful Maine Bluefin Tuna along the coast of Maine. This Bluefin allows us to offer both sushi-quality Loin and TORO. In the Fall/Winter, the Maine Sea Urchin Season is running, so we will have fresh UNI then.
