The Brewers grow these scallops in Japanese-style lantern nets in cold, nutrient-rich waters off Stonington, Maine. The scallops youâre getting took roughly three years to growâand when theyâre ready, they move fast: we receive them midweek on our Portland wharf so they can be enjoyed at peak freshness.
These live scallops are more like oysters than traditional scallops. Once you remove the belly, the whole scallop is edible. Marsdenâs favorite way to prep them is a quick steam-shuckâit takes about one minute and makes opening them easy.
