These butterflied New England Brook Trout are a beautiful, versatile fish that are easy to cook at home. Each fish is approximately 10–12 inches long and 8–12 oz, making it an especially nice size for stuffing and roasting whole, though they’re also excellent grilled, pan-fried, or simply roasted with a little oil, salt, and seasoning.
